Cranberry White Chocolate Biscotti

This is seriously good biscotti!  A good snack before a workout, dunked in coffee, after a workout, with lunch, ok--anytime!!


I'm not the best food photog, but you get the jist of it.

The recipe is based on the biscotti of same name Vegan Cookies Invade Your Cookie Jar.  You can find pretty much any cookie recipe you can think of in that book--but there are no dairy products used (good for people that have egg allergies or are lactose intolerant) and there is NO cholesterol because cholesterol only comes from animal products/by-products.  By using binders like flax seed meal instead of eggs, you get healthy omega fats that fuel you--not cholesterol laden egg yolk that slows you down/clogs your arteries; using real pressed oils and margarines you get better fats than butter provides (butter has no healthy qualities).  The biscotti is fairly high calorie, but its a treat--its high cal you know it probably has good flavor : )
